Mount Vernon Wine Wassail
Wassail refers both to the salute "Waes Hail", (Middle English for 'be you healthy'), and to the drink of wassail. Wassail is a hot mulled cider drink as part of wassailing, an English ritual intended to ensure a good apple harvest the following year. Wassail began as a spiced wine that resembled Roman recipes which survived the Middle Ages. It was a libation for the wealthy who could import the wine, fruit, sugar, and spices. When ale replaced the wine, wassail recipes varied according to the means of each family.
