Cucumber Marmalade

This marmalade is as beautiful as it tastes, getting its striking, natural green color from the abundant cucumber rinds in the jelly. It is great as a breakfast marmalade or, as shown here, on toast with goat cheese and prosciutto. A great garnish for main courses or as a glaze. Swedish Meatballs anyone?
