Chesapeake Bay Crab Cake Seasoning
In George Washington's time, crabs from the Chesapeake Bay were regularly consumed in the main house at Mount Vernon. Today you can make your own crab cakes or appetizer-size crab puffs with this mix of Chesapeake Bay Seasoning, created on the Eastern Shore of Virginia. The seasoning contains air-dried red bell peppers, carrots, celery, tomatoes and leeks plus cracker crumbs. Mix seasoning with an egg, mayonnaise, and fresh crab meat and then sauté or broil. You also can substitute cooked flaked fish and make fish cakes. The 2 ounce packet will make two to four crab cakes depending on size or 10 to 12 mini crab cakes or puffs. Recipe included.
